This book is packed with easy and simple recipes to tantalize your taste buds and give you energy. We have gone through quite a few but this one I’m sharing today is a favorite to make for dessert when we have friends over. It truly tastes like a shortbread cookie and has only five ingredients.
Vanilla-Walnut Shortbread Cookies
2 cups raw walnuts
1 cup unsweetened coconut, finely shredded
1/4 cup raw honey
1 teaspoon vanilla extract
pinch of sea salt.
1. Blend walnuts, coconut, honey and vanilla, and salt in a food processor until a moist dough forms. It takes about 60 seconds and it will be very oily when handled.
2. Pinch off pieces of the dough, gently squeeze, knead and roll the pieces into balls about 1 1/2 inches in diameter. Press each ball between your palms to flatten slightly.
3. Store in a sealed container int he refrigerator for up to 3 weeks or in the freezer for up to 3 months.
